Herbed Mushroom and Kale Skillet

Serves 4

Prep and cook time: 20 Minutes


  • 6 eggs 
  • 1/2 tsp. oregano
  • 1/2 tsp. onion powder
  • 1/2 cup mushrooms, mixed or button, sliced 1cupbabykale
  • 1/4 cup water
  • 2 tbsp. olive oil
  • 1 tsp. dill
  • 1 tsp.sea salt


  1. Heat cast iron skillet to medium, add in olive oil.

  2. Add to skillet, mushrooms, kale, and seasonings, stirring occasionally for 3 minutes.

  3. In a bowl, whisk together eggs and water.

  4. Pour into skillet over kale and mushroom mixture.

  5. Cook covered loosely with tin foil, on medium-high heat until center is set. Can turn heat to low after 5 minutes. Entire cooking takes approximately 10 minutes. (can flip over after 4 minutes and remove foil if you like a more browned and crispy egg dish)

  6. Turn off heat. Let sit 2-3 minutes before slicing.
