Cocoa Almond Cookie Bar Bake

Cooking Times

25 minutes

  • 1/2 cup ground almonds
  • 1/3 cup almond our
  • 2eggs
  • 2 tbsp. arrowroot powder
  • 1/2 cup cocoa powder
  • 1/4 cup granulated stevia (or granulated acceptable sweetener)
  • 2/3 cup coconut oil
  • 1/2 tsp. sea salt
  • 1 1/2 tsp. vanilla
  • 1/2 tsp. baking soda

Directions

  1. Preheat oven to 350 F.

  2. Grease a 9 X 9 glass baking pan with 2 tsp of the coconut oil.

  3. Melt over a low heat the cocoa, granulated stevia, coconut oil, and vanilla over a low heat till blended. Turn o heat.

  4. Mix all dry ingredients into a large bowl.

  5. Using an electric blender, blend cocoa mixture, eggs, and dry ingredients by adding small batches at a time until all ingredients are blended.

  6. Pour into baking pan.

  7. Bake for 30 minutes, or until center is set.

  8. Remove from oven and set out to cool for 10 minutes.

  9. Cut into bars before serving.
