Golden Zucchini Crock Pot Bread

Cook time: 2-3 hours


  • 1egg
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1 cup zucchini, shredded
  • 1 tsp organic vanilla extract
  • 1/3 cup stevia sweetener, granulated
  • 1/3 cup almond butter
  • 1 1/2 cups almond flour


    1. Line the bottom of your Slow Cooker with greased parchment paper.

    2. Whisk the egg, oil, vanilla, and Stevia in a bowl.

    3. Add the almond butter and stir well.

    4. Add the almond our, baking powder, and baking soda, salt, and cocoa powder; stir until combined well.

    5. Add shredded zucchini and stir again.

    6. With your hands knead the batter until rough combined.

    7. Pour the almond-zucchini mixture into Slow Cooker.

    8. Close the lid and cook on HIGH for about 2-3 hours.

    9. Let cool for 5 minutes before slicing and serving warm.
