Sweet and Tart Lemon Cream


  • 4 egg yolks
  • 1/2 Cup Coconut Milk
  • 1 tsp. vanilla extract
  • 1/2 Cup melted coconut oil
  • Juice of 2 Lemons
  • 3 Tbsp. Granulated Stevia


  1. Mix all ingredients except oil in a metal bowl.
  2. Pour into saucepan and add oil slowly while heat is on very low while stirring.
  3. Stir continuously as the mixture cooks, for approximately 5 minutes or until thickened.
  4. Refrigerate for at least 2 hours and up to 2 days. Whisking before serving.
