Oven Baked Two Pepper Chicken
Prep and Cook time: 1 hour
- 1 whole chicken, cut up
- 1 yellow bell pepper, cut into chunks
- 2 cloves garlic, diced
- 4 tbsp. melted butter
- 1 tsp. sea salt
- 1 tsp. red pepper flakes
- 1 tsp. paprika
- 2 tbsp. parsley flakes or 1/4 cup fresh parsley chopped)
Preheat oven to 375 F.
Rinse and pat chicken dry with a paper towel.
Lay chicken and peppers in a 9 X 13 glass baking dish.
Blend butter, garlic, and seasonings in a glass microwave safe dish. Melt for 1 minute, then stir together.
Drizzle chicken with butter and seasoning mixture.
Cover the chicken pan with tin-foil and bake for 20 minutes.
Uncover the pan, and bake for an additional 25 minutes, or when breasts are pierced, juice runs clear.
