Oven Baked Two Pepper Chicken

Prep and Cook time: 1 hour


  • 1 whole chicken, cut up
  • 1 yellow bell pepper, cut into chunks
  • 2 cloves garlic, diced
  • 4 tbsp. melted butter
  • 1 tsp. sea salt
  • 1 tsp. red pepper flakes
  • 1 tsp. paprika
  • 2 tbsp. parsley flakes or 1/4 cup fresh parsley chopped)


  1. Preheat oven to 375 F.

  2. Rinse and pat chicken dry with a paper towel.

  3. Lay chicken and peppers in a 9 X 13 glass baking dish.

  4. Blend butter, garlic, and seasonings in a glass microwave safe dish. Melt for 1 minute, then stir together.

  5. Drizzle chicken with butter and seasoning mixture.

  6. Cover the chicken pan with tin-foil and bake for 20 minutes.

  7. Uncover the pan, and bake for an additional 25 minutes, or when breasts are pierced, juice runs clear.
