Pan Seared Pork Chops with Sweet and Sour Peppers

Serves 2

Cook time: 25 minutes


Sweet & Sour Peppers

  • 2 tbs. butter
  • 1 red onion, sliced
  • 2 red bell peppers, seeded & thinly sliced
  • salt and pepper to taste
  • chili flakes (optional)
  • 1/4 cup sherry vinegar
  • parsley or basil, chopped

Pork Chops

  • 2 pork chops 
  • salt and pepper to taste
  • 2 tbs. butter
  • 2 cloves garlic, lightly smashed
  • 3 sprigs thyme, (optional)



Sweet & Sour Peppers

1. Melt butter in pan over medium heat and add onion, stirring frequently.

2. Once onions have caramelized, add bell peppers and season to taste. You can also add chili flakes or any other desired seasoning.

3. After peppers have softened, deglaze with sherry vinegar. Reduce until you have a nice sauce. Turn off heat and add chopped parsley or basil. Transfer to plate and cover.

Pork Chops

1. Season pork chops with salt and pepper. Wipe out pan with paper towel and place it back on medium-high heat.

2. Melt more butter in pan and add pork chops. Also add garlic and thyme sprigs. Cook 2–3 minutes per side, adjusting for thickness of chops.

3. After flipping chops the first time, start basting chops using spoon. Once cooked to desired doneness, let rest 5 minutes.

4. Serve pork chops with Sweet & Sour Peppers.
