Pork Chops with Mushroom Sauce
Pork is high in protein and an excellent source of thiamine, iron, selenium, niacin and B6, and mushrooms have healing powers and are considered a super immune-enhancing plant-based food.
Cook time: 1 hour
- 6 pork chops
- 2 tbsp. Ghee
- 1 green onion, finely chopped
- 1/4 lb. fresh mushrooms, rinsed and patted dry with paper toweling
- 1/2 cup water
- 1 tsp. oregano
- 1 tsp. basil
- 2 tbsp. stone ground dijon mustard
- 2 tbsp. almond flour
Heat ghee in a deep frying pan. Saute the pork chops for 2-3 minutes on each side.
Add the onion, garlic, a pinch of salt and sauté for 5 minutes; stir.
Season with salt and pepper. Add water, cover and simmer for 15 minutes. (or until the center of chops are very slightly pink)
Sprinkle the oregano and basil, and mustard and almond flour, dissolved in 1/2 cup of warm water and shake. Then stir into the pan to incorporate all ingredients well. Simmer with an open lid for 5 minutes.
