Asparagus Omelette

Asparagus is one of the easiest ways to support your body's natural detoxification process. Loaded with vitamins A, C, E, and K... including fiber, this vegetable is a powerhouse. 

Serves 2

Cooking time: 15 minutes

Ingredients

  • 4 eggs
  • 1 tbsp. water
  • 4 asparagus stalks, trimmed and washed
  • 2 tsp.Ghee
  • Salt and pepper to taste

Directions

  1. Saute asparagus in ghee in a skillet, season with salt and pepper. Set aside.

  2. In a separate bowl, whisk eggs and water.

  3. Pour egg mixture into a heated skillet that asparagus was cooked in. Cook on medium until almost cooked through.

  4. Gently flip egg mixture over to cook the other side.

 5. Add cooked asparagus to one side of the cooked omelet and flip the other half over to cover.6. Cut in half and serve immediately.
