Chicken with Squash "Spaghetti"
Cook and prep time: 1 hour
- 1 lb spaghetti squash
- 1 Tbsp avocado oil
- Salt & ground pepper to taste
- 1 lb chicken breasts, boneless, skinless, cubed i
- 2 Tbsp garlic-infused olive oil
- 1- 8 oz. can diced organic tomatoes, drain juice
Preheat oven to 400 F/200 C degrees.
Cut the spaghetti squash in half and remove the seeds with a spoon.
Season it with avocado oil, salt, and pepper.
Place the squash cut side down on a baking sheet and bake until golden, 30-40 minutes.
Remove from oven and let cool for 10 minutes.
Use a fork and scrape out “spaghetti.”
Heat the oil in a frying skillet over medium-high heat.
Add the chicken cubes, and tomatoes, and season with salt and pepper. Cook while stirring for approximately 5 minutes, or until the chicken is done.
Add your chicken and “spaghetti” to a large bowl and stir.
Taste and adjust salt and pepper. Serve.
