Ground Beef with Zucchini Stew (Crockpot)

This flavorful dish is simple to make and loaded with nutrients. The ground beef gives you necessary protein, iron and zinc, and the herbs provide powerful anti-inflammatory benefits your body needs.

Ingredients

  • 1/4 cup garlic-infused olive oil 
  • 2 green onions, diced 
  • 1 lb ground beef
  • 4 zucchini, diced 
  • Salt and pepper, to taste
  • 2 tsp dried oregano
  • 1/2 tsp fresh thyme leaves, chopped
  • 1- 8 oz can diced tomatoes

Directions

  1. Heat the olive oil in a large frying skillet over medium-high heat.

  2. Add the onions, beef, and a pinch of salt: sauté about 5 - 6 minutes stirring frequently.

  3. Add the zucchini, herbs, and tomatoes, stir well. Add salt and pepper to taste.

  4. Transfer the mixture to your Slow Cooker.

  5. Cover and cook on low for 6 hours.
