Ground Beef with Zucchini Stew (Crockpot)

- 1/4 cup garlic-infused olive oil
- 2 green onions, diced
- 1 lb ground beef
- 4 zucchini, diced
- Salt and pepper, to taste
- 2 tsp dried oregano
- 1/2 tsp fresh thyme leaves, chopped
- 1- 8 oz can diced tomatoes
Heat the olive oil in a large frying skillet over medium-high heat.
Add the onions, beef, and a pinch of salt: sauté about 5 - 6 minutes stirring frequently.
Add the zucchini, herbs, and tomatoes, stir well. Add salt and pepper to taste.
Transfer the mixture to your Slow Cooker.
Cover and cook on low for 6 hours.
