Keto Almond Chia Pomegranate Parfait


  • 8 Tbsp. Chia Seeds
  • 1 1/2 Cups Almond Milk
  • 1/2 Cup Coconut Cream
  • 1 tsp. vanilla extract
  • 1/4 Cup slivered almonds
  • 4 Tbsp. Pomegranate seeds
  • 2 Tbsp. Granulated Stevia sweetener


  1. Blend all ingredients in a glass bowl except pomegranate seeds, and cover.
  2. Refrigerate for 1 hour covered.
  3. Layer creamy mixture into glass serving bowls, with pomegranates and almonds.
  4. Put back in the refrigerator for 1-2 hours as it thickens, or overnight
