One Pot Keto Chicken Cacciatore

This dish is loaded with flavor, high in Vitamins A, C, fiber and protein. The herbs and spices have anti-inflammatory properties and you'll love that it cooks in one simple pot!

Ingredients


  • 1 whole chicken cut up
  • 1 pound button mushrooms
  • 1/3 cup kalamata olives, pitted
  • 1/2 cup water
  • 1/4 cup olive oil
  • 3 tbsp. tomato paste
  • 1 small yellow onion, sliced thin
  • 1 tbsp. oregano
  • 1 tsp. basil
  • 1 tsp. sea salt
  • 1/2 tsp. fresh ground pepper
  • 3 cloves garlic, sliced thin
  • 1 bunch fresh parsley


Directions

  1. Rinse and pat dry chicken. Set aside.
  2. In a Dutch oven, combine olive oil, tomato paste, garlic, onion, and seasonings. Simmer for 10 minutes.
  3. Add in chicken, olives and mushrooms, and water, and gently toss so that chicken is coated with tomato mixture.
  4. Cover and simmer on low to medium heat, for 40 minutes.
