One Pot Keto Shrimp and Vegetable Stew

Serves 6

Carb content - 11 gms. per serving

Ingredients

  • 6 cups unsalted, vegetable broth or stock
  • 16-20 large raw shrimp, cleaned and deveined, tail off
  • 1 small yellow onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 cup green beans, trimmed, cut in half
  • 2 cloves garlic, diced
  • 4 tbsp. ghee
  • 1 tsp. celery salt
  • 1 tsp. paprika
  • 1 tsp. onion powder
  • 1 tsp. cayenne pepper


Directions

  1. In a large dutch oven, melt ghee on low.
  2. Turn heat to medium, add onion, carrots, celery, and garlic with all seasonings, and stir while cooking for 5 minutes.
  3. Add in shrimp and cook for approximately 5 minutes or until shrimp are pink.
  4. Add in broth and remaining ingredients, cover and cook on low for 35 minutes.
  5. Serve in bowls.
