Oven Baked Two Pepper Chicken

Serves 4

Prep and Cook time: 1 hour


  • 1 whole chicken, cut up
  • 1 yellow bell pepper, cut into chunks
  • 2 cloves garlic, diced
  • 4 tbsp. melted butter
  • 1 tsp. sea salt
  • 1 tsp. red pepper flakes
  • 1 tsp. paprika
  • 2 tbsp. parsley flakes or 1/4 cup fresh parsley chopped)


  1. Preheat oven to 375 F.

  2. Rinse and pat chicken dry with a paper towel.

  3. Lay chicken and peppers in a 9 X 13 glass baking dish.

  4. Blend butter, garlic, and seasonings in a glass microwave safe dish. Melt for 1 minute, then stir together.

  5. Drizzle chicken with butter and seasoning mixture.

  6. Cover the chicken pan with tin-foil and bake for 20 minutes.

  7. Uncover the pan, and bake for an additional 25 minutes, or when breasts are pierced, juice runs clear.

    Hello, I’m Tam. Have experienced the first day of Native Path Reset. Thought it was a fairly easy, relaxed choice. The thought kept running thru my mind: “I can do this, this is a gift to me.” Hadn’t gone to the store, so just fixed things out of the refrigerator. Scrambled eggs and honeydew melon for breakfast; a veggie salad topped with tuna & pine nuts for lunch; dinner was shrimp cooked in fajita sauce, homemade guacamole on the side with diced tomatoes, sliced olives. Afternoon snack was a peach of a peach, yummy.
