Roasted Chicken Breasts with Kale

Serves 4

Cook and Prep time: 1 hour


  • 4 bone in chicken breasts
  • 4 cups kale, stems removed
  • 4 tbsp. avocado oil
  • 2 cloves garlic, sliced
  • 1 red pepper, sliced
  • 1 tbsp. paprika
  • 1 tbsp. onion powder
  • 1 tbsp. sea salt
  • Pepper to taste


  1. Preheat oven to 375 F.

  2. Rinse and pat dry chicken breasts

  3. Lay Chicken breasts bone side down in 9 X 13 baking pan.

  1. Arrange Kale and Peppers alongside the chicken.

  2. Drizzle with Avocado Oil and sprinkle with seasonings.

  3. Bake covered with tinfoil for 20 Minutes.

  4. Uncover and bake for an additional 25 minutes, or until chicken is cooked through. (check for doneness by removing a breast and piercing with a fork. Juice should run clear)
