Sautéed Crispy Squash

Serves 2

Cook and Prep time: 15 minutes


  • 4 green or yellow squash (zucchini)
  • 1 Tsp. sea salt
  • 2 tbsp. avocado oil
  • 1 tsp. oregano
  • 1 tsp. Basil
  • 1 tsp. Garlic powder


  1. Clean the squash and slice thinly.

  2. In a bowl, combine the oil, and all of the seasonings.

  3. Pour the oil mixture over the squash slices and toss to combine well.

  4. Heat a skillet to medium-high.

  5. Add 1/2 of the squash and lie at on the bottom of the pan, and cook until crispy on one side, then flip and cook the other side until crispy. (do this in 2 separate batches)

  6. Serve hot.
