Baked Fish with Zucchini Medley

Prep and Cook Time: 55 minutes


  • 2 - 6-8 oz fillets of sea bass or halibut
  • 3 medium zucchini, diced
  • 1 spring onions, diced
  • 2 tbsp. Fresh parsley, chopped
  • 2 lemons, one for the juice, one for slicing
  • 3/4 cup olive oil


  1. Preheat oven to 375 F.

  2. Rinse the sh and pat dry with a paper towel.

  3. Oil the underside of the sh so it doesn’t stick to the baking sheet, then season the sh and set on a baking sheet.

  4. In a separate bowl, combine diced vegetables, lemon juice, seasonings, and olive oil.

  5. Lay vegetable mixture alongside the sh.

  6. Bake in the oven for 35-40 minutes, or until fish is flaky.

  7. Serve immediately with lemon slices.
