Shrimp and Avocado Salad
Prep time: 10 Minutes
- 12 cooked shrimp
- 1 firm avocado, diced
- 2 cups mixed greens
- 2 lemons
- 1 tsp. cayenne pepper
- 1 tsp. sea salt and pepper to taste
- 4 tbsp. olive oil
- 1 tbsp. paleo mayo (or homemade)
In a small bowl, blender or food processor, squeeze the juice from the lemons and add the cayenne pepper, salt, olive oil, and mayo. Blend on high speed for 15 seconds.
In a large bowl, blend lightly the greens, shrimp, and avocado.
Lightly toss the dressing into the salad and season to taste.
