Shrimp Skewers with Sweet Potato Oven Fries

This tasty dish will satisfy anyone! High in protein, vitamin's A and C, iron and calcium, and loaded with flavor. 

Serves 2-3

Cook time: 50-60 minutes

Ingredients:

Shrimp Skewers

  • 1 lb. shrimp, peeled and deveined
  • 1 cup pineapple, cored & cubed
  • 2 cups green or red bell pepper, cubed
  • 3-4 tbs. coconut oil, melted
  • salt and pepper to taste
  • 1 tbs. lemon juice
  • 1 tbs. butter
  • handful basil or cilantro, chopped

 

Sweet Potato Fries

  • 1 sweet potato, peeled and sliced into fries
  • 1-2 tbs. coconut oil, melted
  • sprinkle cinnamon
  • 1/4 tsp. nutmeg
  • salt and pepper to taste

Directions

1. Skewer shrimp, pineapple and peppers on water-soaked skewers.

2. Drizzle with melted coconut oil and season with salt and pepper.

3. Grill 2-3 minutes per side (depending on how hot your grill is), until shrimp are just cooked through.

4. Heat lemon juice and butter on stove until combined.

5. Add freshly chopped basil or cilantro and serve.

Sweet Potato Fries

1. Preheat oven to 400° F.

2. Place sweet potato fries on baking sheet and drizzle with coconut oil.

3. Sprinkle with cinnamon, nutmeg, and salt.

4. Bake 35-40 minutes, turning halfway through.
