Spring Salad with Avocado and Pumpkin Seeds

  • 1 avocado, sliced
  • 1 cup mixed greens
  • 1 tsp. sesame seeds
  • 2 tbsp. olive oil
  • 1 tbsp. apple cider vinegar
  • 2 slices red onion, sliced thin
  • 1 cucumber sliced thin
  • 1 cup broccoli (or any veggie raw you have on hand)
  • 1/4 cup raw pumpkin seeds
  • Juice of one lemon
  • Juice of one lemon
  • 1 pinch garlic powder
  • salt and pepper to taste


  1. In a small bowl, whisk lemon juice, olive oil, and apple cider vinegar (ACV) with seasonings. Set aside.

  2. In a large bowl, blend all of the other ingredients and toss with dressing.

  3. Separate into 2 bowls, season to taste and serve.
