Buckeyes

High in protein, fiber, magnesium and vitamin E, these tasty treats are great when you've got a sweet tooth, and want to stay on top of your health!

Serves 8-10

Cook and prep time: 60 minutes

Ingredients

Buckeyes

  • 1 cup almond meal
  • 1 cup finely shredded coconut
  • 1 cup sunflower butter
  • 1 tsp. vanilla
  • 20 drops liquid stevia

Chocolate Topping

  • 1/4 cup melted coconut oil
  • 1 tsp. vanilla
  • 20 drops liquid stevia
  • 6 tbs. cocoa powder

Ingredients

1. Combine all buckeye ingredients in mixing bowl. Place in freezer 30 minutes to harden.

2. Roll into balls and return to freezer, leaving overnight or until hardened.

Chocolate Topping

1. Whisk topping ingredients together until smooth.

2. Use wooden skewer or fingers to dip half the ball into chocolate. Place dipped balls in dish and return to freezer. Keep in freezer until ready to eat.
