Ginger Zest Dressing

Yield: 1 CUP
- 1⁄2 Cup Avocado Oil
- 2 Tbsp. Apple Cider Vinegar (ACV)
- 1 Lime, zested and juiced
- 2 Tbsp. Coconut Aminos
- 1 Carrot, peeled and cut into chunks
- 2 Tbsp. shallot or red onion, diced
- 1 Tsp. Ginger, grated
- 1 Clove garlic
- 1⁄2 Tsp. turmeric
- 1⁄4–1⁄2 Tsp. salt
Blend all ingredients in blender until smooth.
Add a little water if you want to thin it out.
3. Store in a mason jar and refrigerate.
