Orange and Pistachio Pork Chops with Green Beans
- 1 Orange, zested and peeled
- 1 Tbsp. + 1 Tbsp Ghee
- 2 Pork Chops
- 1⁄2 Cups shelled pistachios crushed
- 1 lb green beans trimmed
- 1-2 cloves garlic minced
- salt and pepper to taste
Preheat oven to 450° F.
Add peeled orange to a food processor or high-powered blender and blend a few seconds.
Transfer to a small saucepan and cook over medium heat until juices begin to evaporate and mixture thickens.
In a cast-iron skillet over medium-high heat, melt tablespoon ghee.
Salt and pepper pork chops to taste.
Brown chops on each side 6 minutes.
Remove from heat and spread tablespoon orange mixture over each chop. Sprinkle with pistachios.
Bake 12–16 minutes or until cooked. Remove chops from pan and rest a bit.
Meanwhile, Line a baking sheet with parchment paper.
10. Toss green beans on a baking sheet with orange zest, garlic, and tablespoon ghee.
Sprinkle with salt & pepper to taste.
11. Roast 10 minutes.
12. Serve pork chops with side green beans.
