Pesto Sauce

Yield: 1 CUP

Ingredients

  • 1 Cup Basil 
  • 3–4 Cups arugula or spinach combo
  • 1 Garlic clove 
  • 1⁄2 Cup raw pumpkin seeds 
  • 2 Tsp. lemon juice 
  • 1⁄2 Cup extra-virgin olive oil 
  • 1 Tsp. salt 
  • 1⁄4 Tsp. freshly cracked pepper

Directions

1. Pulse everything in food processor until desired consistency.

2. Add more olive oil for thinner pesto.
