Sweet Potato Casserole

This tasty dish makes you feel like you're "cheating" with the rich and buttery flavors that won't ruin your waistline. Healthy carbs loaded with fiber and vitamin A, make this sweet potato dish a delicious addition to any active persons meal plan.

Serves 8-10

Cook time: 40 minutes


  • 5 cups sweet potatoes, cooked
  • 1 cup full fat coconut milk
  • 1/2 tsp. vanilla
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/8 tsp. cloves
  • 1/2 tsp. salt
  • 20 drops liquid stevia
  • 1/4-1/2 cup toasted pecans or macadamia nuts, chopped


1. Preheat oven to 400° F.

2. Bake sweet potatoes 40 minutes to an hour until cooked through (fork pierces easily). Let cool.

3. Measure out 5 cups sweet potatoes. Using food processor, blend sweet potatoes, coconut milk, vanilla, spices, and salt until smooth and creamy. You can add coconut milk if mixture is too thick. May need to process in a couple separate batches.

4. Add stevia last to reach desired sweetness level.

5. Heat oven to 350° F.

6. Place in baking dish. Bake 20 minutes.

7. Remove from oven and top with nuts. Return to oven 10 minutes. Serve and enjoy.
