- 2 Heads of cauliflower, cut into small florets
- 1⁄4 Cup Paleo Mayo (store bought or homemade (page 178)
- 1⁄4 Cup butter
- 1⁄4 Tsp. nutmeg
- salt and pepper to taste
Optional Garnish - Chopped Chives
Place cauliflower florets into pot with steam basket and water.
Steam 8-10 minutes minutes or until fork-tender.
Remove from heat and place cauliflower in medium colander to remove as much water as possible.
4. Put cauliflower and all other ingredients in food processor and process until smooth and creamy. Top with chopped chives if you choose.
