
Creamy Kale and Broccoli Soup
This creamy favorite will make you forget it's healthy! Rich in healthy fats and vitamins A and C, and loaded with fiber...this soup will keep you full and satisfied with veggies with benefits!
Serves 6
Cook time: 30 minutes
Ingredients
- 1/4 cup olive oil
- 2 green onions finely chopped (only green parts)
- 2 celery stalks, chopped
- 2 lb broccoli
- 2 cups kale ( finely chopped)
- • 1/2 tsp ground ginger
- 2 -3 cups water
- 3 Tbsp butter grass-fed
- 1 cup full fat cream or 1 cup unsweetened coconut milk
Directions

Heat the oil in a large pot and sauté chopped green onion and celery for about 2 minutes.

Add the broccoli, celery, and kale. Season the salt and pepper to taste, and add the ground ginger.

Pour water to cover vegetables, cover and simmer for 10 minutes, until tender.

Once everything is cooked through, add the butter, and cream or coconut milk and cook for an additional 5-7 minutes on low. Then transfer to a blender and blend until smooth. (watch out, will be hot!)

Adjust salt and pepper and serve.
