Ham and Egg Breakfast Roll Ups


  • 4 Slices thick sliced ham
  • 8 eggs
  • 1 green pepper diced
  • 1/2 small yellow onion diced
  • 4 cherry tomatoes
  • 2 Tbsp Ghee
  • 4 Tbsp water
  • Salt and Pepper to taste


1. In a skillet, melt ghee on medium heat.

2. Whisk eggs with water, salt, and pepper in separate bowl.

3. Cook peppers, and onions until soft, add in eggs and cook. Keep flipping over egg scramble until done.

4. On each slice of ham, put 1/4 of egg mixture and roll up. Secure with a toothpick and a tomato on top for garnish.
