Ingredients

  • 2 scoops NativePath Chocolate Collagen
  • 3 large eggs
  • 1 cup coconut sugar
  • ⅓ cup almond flour
  • 2 tablespoons coconut flour
  • 1 ½ tablespoons cocoa powder
  • 2 tablespoons prepared organic coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 ¼ cups Hu Dark Chocolate Gems
  • 10 tablespoons coconut oil

Instructions

  1. Preheat your oven to 325°F and line a 9x13 baking dish with parchment paper.
  2. In a medium bowl, add eggs and coconut sugar. 
  3. Using a stand or hand mixer, beat the eggs and sugar on high until light a fluffy, about 3-5 minutes. 
  4. Stir in almond flour, coconut flour, NativePath Chocolate Collagen, cocoa powder, coffee, and vanilla extract.
  5. Mix until combined.
  6. In a small, microwave-safe bowl, combine 1 cup Hu Dark Chocolate Gems and coconut oil. Microwave in 15-second intervals, stirring well between each round, until the chocolate is melted and the mixture is completely smooth.
  7. Add the melted chocolate to the rest of the batter and stir well to combine. 
  8. Fold in the remaining ¼ cup of chocolate chips.
  9. Pour the brownie batter into the prepared dish.
  10. Bake for 30-40 minutes or until a toothpick comes out with moist crumbs.
  11. Remove from the oven and let cool completely on the counter or a wire rack.
  12. Cut into squares and enjoy!
