Ingredients

Crust

  • 2 cups almond flour
  • ½ cup cassava flour
  • 6 tablespoons coconut oil, chilled
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ¼ teaspoon baking soda

Filling

  • 1 ½ cups sweet potatoes (about 4 small ones), roasted and peeled
  • 2 scoops NativePath Collagen Peptides
  • ½ cup unsweetened nut milk
  • 2 ½ tablespoons maple syrup
  • 1 egg + 1 egg yolk
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon salt

Instructions

Crust

  1. Preheat oven to 350°F.
  2. Add all crust ingredients to a food processor and pulse until everything is evenly combined. You should be able to squeeze the mixture in your hand and have it hold its shape. If it’s too dry or crumbly, add more coconut oil until it reaches the desired consistency.
  3. Use coconut oil to lightly grease 12 muffin tins. Add about 2 tablespoons of crust into each muffin tin. Use your fingers to gently press the dough crust to the bottom and along the sides to form a shell.
  4. Bake the crust for 5 to 6 minutes. Remove from the oven and allow to cool.

Filling

  1. Bake sweet potatoes at 400°F for 30 to 45 minutes and set aside. Once cool, gently take off the peel. To help speed up this step, you can bake and peel the sweet potatoes the day before.
  2. Add all filling ingredients to a blender and blend until smooth.
  3. Use a spoon or scoop to fill each shell with the filling. To get a nice puffy-filling look, overfill each muffin tin with extra filling.
  4. Bake for another 20 to 25 minutes or until golden on top.
  5. Let cool for 15 minutes before removing from the muffin tins.
  6. Enjoy as is or add a dollop of coconut cream and cinnamon on top.
