Greek Grilled Lemon Chicken with Zucchini
- 2 Chicken breasts, sliced into 4 pieces each
- 2 green zucchinis sliced
- Juice of one lemon
- 1 Tbsp. Oregano
- 1 tsp. Dried basil
- 1 clove garlic mashed
- 2 Tbsp. Avocado Oil
- 1 tsp Sea Salt
- Pepper to taste
1. In a bowl, combine chicken, 1 Tbsp of oil, and seasonings.
2. Blend so that chicken is covered in marinade.
3.Heat grill to high.
4.Brush last Tbsp of oil on zucchini, season with salt and pepper.
Grill chicken and zucchini on a grill pan on high, turning once until chicken is done, or when pierced, juice runs clear. (approximately 5 minutes on each side)
