Instructions

  1. Add the berries, chia seeds, and collagen powder to a blender or food processor.
  2. Pulse for a few minutes until it reaches a jam-like consistency.
  3. Transfer the jam mixture to a silicone ice cube tray and freeze until solid, about 2-4 hours.
  4. Once the bites are frozen, place the chocolate and coconut oil in a microwave-safe bowl and microwave for 30-60 seconds. After the first 30 seconds, start stirring in 15-second increments (even if it looks unchanged). Mix until the chocolate and coconut oil are well combined.
  5. Dip each frozen berry bite into the melted chocolate-coconut oil mixture and transfer to a parchment-paper-lined plate. (Note: If you want to add a little saltiness to it, top with flaky Himalayan sea salt!)
  6. Pop the bites in the freezer for 10-15 minutes to let the chocolate set.
  7. When ready to enjoy, remove the bites from the freezer and let soften for 1-2 minutes.

Storing Your Bites: Put your chocolate berry bites in an airtight container and store them in the freezer for up to 3 months.
